Healthy Turkey Chili

Hi Everyone!

I’ve been craving chili a lot lately maybe because of this cold weather so I found the PERFECT guilt-free turkey chili recipe! I always thought chili as a “fancy, complicated meal”, but this recipe is super simple and quick to fix up if you’re craving chili RIGHT NOW!! Instead of tortilla chips, I subbed it for TJ’s plantain chips, which are so delicious and healthy too! You can also add in sour cream as topping, but I opted out to be on the cleaner side hehe CHEESE I can’t give up though so I snuck some in the finished bowl! 😉 It tastes seriously AAAAMAZING! I can literally eat this every meal so I hope you decide to try it! 🙂

INGREDIENTS
2 teaspoons olive oil
1 yellow onion, chopped
3 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound ground turkey
1-2 tablespoons chili powder (depending how spicy you want it!)
2 teaspoons ground cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt, plus more to taste
1 (28-ounce) can diced tomatoes
1 1/4 cups chicken broth
2 (15 oz) cans dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained

For topping: shredded Mexican cheese, avocado, TJ’s plantain chips, cilantro

INSTRUCTIONS
Place oil in a large pot and place over medium high heat.
Add in onion, garlic, and red pepper and saute for 5-7 minutes, stirring frequently.
Add in ground turkey and break up the meat; cooking until no longer pink.
Add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
Add in tomatoes, chicken broth, kidney beans and corn.
Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens and flavors come together.
Garnish with toppings and ENJOY!
