Insta Pot Chicken Burrito Bowl

HELLO BEAUTIFUL PEOPLE!!

I think we’re wayy past due for a recipe post! I recently got an Instant Pot (pressurized cooker) from the Amazon Treasure Truck! If you’re not signed up to get notified when a Treasure Truck comes your way, you must!! I didn’t personally go pick up my Insta Pot from the truck, but since Vince bought it for me, he naturally picked it up and said it was a super fun experience! It was parked outside of a Whole Foods and they handed out $$ to spend at Whole Foods, which expired on the same day. I think the idea is to get you to hop into Whole Foods and get some grocery for your snazzy new Insta Pot! 😉 Anyway, he said music was BLAAASTING from the fully lit up carnival-esque Treasure Truck. It’s usually a really awesome deal for some nifty toys so you should definitely check it out! He got the 3 Quart Insta Pot for only $48.99!

So the story behind this Insta Pot is that I’ve been hearing my coworkers RAVE about their Insta Pots and how amazing it is to put uncooked food into this baby and have it ready to eat in as little as 10 MINUTES!! I’m a sucker for new and trendy things so I haddd to have one!! I kept talking about it to Eve and Vince so he happened to see the deal on Amazon Treasure Truck and bought it right away, woohoo!! Thank you!! xox

One thing I do need to stress is to PLEASE READ THE INSTRUCTION BOOKLET!!!!! Tbh the pressure kind of scares me so I made damn sure I read every inch of that user manual. Better safe than sorry ya’ll!! ALWAYS open the lid AWAY from your face and don’t put your face above the pot! The steam is HOT. Very very hot.

I’ve been gathering a bunch of Insta Pot recipes from my co-workers and made a REALLY yummy beef stew the day we got the pot. I’ll share that recipe another day! Please share recipes with me if you’ve got some good ones!! The one I’m sharing today though is seriously AAAMAZING because it only took 10 minutes!! I loaded mine up with cheeese, cilantro, and avos. You bet I brought this to work to show off – I mean eat! 😉 This is super easy and convenient for MEAL PREPPING! Hope you enjoy 🙂

 

INGREDIENTS

1 tablespoon olive oil
1 small onion, diced
1 clove garlic, minced
1 teaspoon chili powder
1/2 of sea salt
1.5 pounds chicken thighs, cut into 1-inch pieces
1 15.5 ounce can black beans, rinsed
1 cup uncooked long grain rice
1 cup chunky salsa
2 cups chicken broth
avocado for serving
chopped cilantro for serving
Mexican cheese for serving

INSTRUCTIONS

Set insta pot to the saute setting. Heat olive oil until it shimmers. Add the onion and cook until translucent, then add the garlic and cook for a minute. Add the chili powder and salt. Add the cut up pieces of chicken, black beans, rice, and salsa. Pour chicken broth over the mixture. Stir to combine.

Securely lock the lid and set the timer for 10-minutes on high pressure.

Once the timer goes off, quickly release the pressure.

PLEASE make sure you open the lid away from your pretty face!

Stir and serve with diced avocado, freshly chopped cilantro, and Mexican cheese!
