Healthy Turkey Enchiladas

Hi friends!

One thing we craved most was Mexican food on our Asia trip so I decided to bake healthy turkey enchiladas! I do love regular enchiladas from Mexican restaurants, but I always get sick of them because of how oily they are! But SURPRISE! Eve and I both didn’t get sick of these babies when we ate them for lunch today! This is the perfect alternative if you want to go the cleaner and healthier route! Wheat tortilla + turkey +BAKED + not TOOOO much cheese! I always thought enchiladas were too complicated to make so I’ve never tried until I found this super simple recipe! Hope you enjoy! 



INGREDIENTS
1 pound ground turkey
1/2 yellow onion
2 garlic cloves
1 zucchini
2 cups of enchilada sauce (I used Trader Joes’!)
1 cup of tomato sauce
6 inch wheat tortillas
Mexican cheese blend
Cooking spray

INSTRUCTIONS
Preheat oven to 375.
Brown ground turkey and drain the juice.
Add in onion, garlic, zucchini.
Add in 1 cup of enchilada sauce and 1 cup of tomato sauce.
Scoop turkey mix onto a wheat tortilla, roll it up, and place it seam side down in a 9 X 13 baking dish.
Spray the finished tortillas with cooking spray.
Bake for 20 minutes.
Pour enchilada sauce on top and then sprinkle with lots of cheese!!
