Shrimp Ceviche!

Hi Friends!

I’ve always wanted to try homemade ceviche so today was the day! Very minimal ingredients and very easy to prepare! Just boil shrimp and chop chop chop! When I was done with my ceviche, something looked really funny but I couldn’t figure it out until Eve pointed out my shrimp wasn’t diced!! OOPS! Don’t forget to chop yo shrimps! Enjoy! 🙂

INGREDIENTS
1 lb frozen shrimp, peeled and deveined
1 medium tomato, diced
1 avocado, diced
1 jalapeno, seeds removed, diced fine (I subbed with Thai chili peppers!)
1/4 cup chopped red onion (I opted out because I get bloated!)
2 limes, juiced
1 tsp olive oil
1 tbsp chopped cilantro
salt and fresh pepper to taste

INSTRUCTIONS
Bring a medium sized pot of water to a boil.
Toss thawed shrimp in the pot and turn off heat.
Leave shrimp in the pot until shrimp develops color.
Pour hot water out and replace with cold water and ice and let cool in fridge.
While shrimp is cooling, chop chop chop all the ingredients!
Take shrimp out of the fridge and ice water and DICE!
Combine all ingredients and enjoy!
**I let ingredients sit in the fridge for a few minutes before devouring 😉
